Breakfast Tacos
These breakfast tacos are super nourishing, ultra gut-friendly and super-charged with maximum levels of balanced flavours and energy to get you set and happy for the day ahead. They are also perfecto to make in advance for efficiency! What’s not to love!
Ingredients:
Salsa:
560g tomatoes
55g cilantro
8g serrano pepper
43g red onion
2 tsp fine Himalayan salt
80ml lime juice
Omelette Tortillas:
4 eggs
5g serrano pepper, finely sliced
30g red onion, finely diced
½ tsp fine Himalayan salt
½ tsp black pepper
a few cilantro leaves
3 - 4 corn tortillas
Toppings:
shredded cabbage, salsa, avocado, slices of serrano pepper and pickled onions

For the Salsa:
Adding salsa to the breakfast tacos is an excellent way to add delicious raw foods like tomatoes and onions to your diet as a prebiotic fiber to improve your gut health.
Combine together diced roma tomatoes, freshly chopped cilantro, chopped serrano pepper, and chopped red onions. Then season with fine Himalayan salt, and fresh key lime juice and mix well. Feel free to add in the seeds of the serrano pepper for extra heat or sow them so you can have serrano pepper plants this summer.
Adjust the taste of your salsa and keep chilled in the fridge for the flavors to mingle.
Serve with corn tortillas or have as a condiment to complement a delicious meal that needs it.
Omelette Tortilla:
Crack the eggs in a bowl and save the shells for a cool project or gardening.
Season the eggs with serrano pepper, diced red onion, fine Himalayan salt, black pepper, and a few cilantro leaves. Whisk the ingredients using a fork and get 3 to 4 corn tortillas before your start cooking.
Turn on the heat to medium level. Brush your cast iron skillet with about a teaspoon of olive oil then ladle in some of the egg mixture and quickly top with a corn tortilla. Press it down flat so the tortilla sticks to the mixture. Let it cook for a few minutes about 2 to 3 minutes until the edges of the omelette set and flip to cook the tortilla for about a minute.
Once you remove the cooked omelette tortilla, place on a baking rack and gently fold it in half using a spatula so if forms a boat which makes it easy to eat your breakfast tacos
Repeat this process for the remaining egg mixture and tortillas. Once you are all done, load up your omelette tortilla with your favorite toppings like shredded cabbage, salsa, slices of avocado, thin slices of serrano pepper for heat and pickled red onions. When you have this for breakfast, you will be sure to have a balanced breakfast filled with healthy fiber from the veggies, good fats from the avocado and eggs, satiating factor from the serrano and pickled onions which will not only make you happy but ensure that your digestive system and entire body is happy and in excellent working order.
