Plantain porridge is such a nourishing breakfast. The nutrients contained in green plantains used in the making of this porridge aim to heal the gut, increase your metabolism and satiate you for long hours. It’s perfect to prep for the week and pair with granola, yogurt and fruit for a healthy indulgent experience.

Ingredients:

360g, 2 Green plantains, 361g

275ml water

275ml coconut milk

500ml water

200ml coconut milk

2 tsp ground cinnamon

½ ground allspice

2 tsp ground ginger

1 whole star anise

55g grated Pilloncilo

¼ tsp fine Himalayan salt

Extras: yogurt, granola and berries

 

Directions:

  1. Peel the green plantains and cut the them into chunks.

  2. Place the plantain chunks in a blender with 275 ml each of water and coconut milk, then blend until smooth.

  3. Warm up a large pot on medium heat and add in 500 ml of water and 200 ml of coconut milk, ground cinnamon, ground allspice and ground ginger. Stir this combination gently and let it warm up for about five minutes.

  4. Next, gently pour the plantain purée into the warm spice liquid and keep on stirring to prevent lumps.

  5. Keep on stirring until this combination gets thick.

  6. Once the porridge turns thick stir in the grated pilloncillo.

  7. Feel free to adjust the consistency of the porridge by adding in more coconut milk for thinner consistency, or cooking the porridge longer for thicker consistency.

  8. Once the porridge has thickened and color has changed from a faded yellow to light to medium shade brown, the porridge is ready.

  9. Pour a portion of the plantain porridge in a bowl and top with yogurt, some granola as well as fresh fruit and enjoy.

  10. Plantain porridge stores well in the fridge. keep any reminder in a container and when it’s time to warm it up, add a little bit of water to a sauce pan together with a portion of the plantain porridge. Whisk this combination well to break up as well as prevent any lumps. allow it to warm up all the way through and serve as desired.
