Almond Chocolate Granola

Almond Chocolate Granola, made with simple and wholesome ingredients to provide you with excellent nutrition. It’s completely oil free and perfect as a snack topping or for an indulgent breakfast paired with milk and fresh fruits.

Ingredients:

275g old fashioned oats

105g almonds

35g unflavoured ice crackers

55g hulled hemp seeds

35g chia seeds

25g ground flaxseed

65ml water

15g cocoa powder

1 ½ tsp vanilla extract

¼ tsp coarse sea salt

80ml raw honey

1 tsp cinnamon powder

65g dark chocolate chips

Directions:

  1. Preheat oven to 375˚F.

  2. Crush the almonds using the bottom of a flat-bottom ceramic ramekin or with a knife

  3. In a mixing bowl, use your hands to crush the rice crackers. Add in the old fashioned oats, crushed almonds, hemp seeds and chia seeds and combine the components using a spatula.

  4. In another container, mix together the ground flaxseed and water give it a few minutes to thicken to form flax gel.

  5. To the flax gel, add in the cocoa powder, vanilla extract, coarse sea salt, raw honey, cinnamon powder, and dark chocolate chips and combine to achieve a homogenous chocolate mixture.

  6. Pour the chocolate mixture over the dry mixture and mix well until the all the dry components are well coated.

  7. Divide the granola mix between two large parchment-lined baking sheets, spread it out well into a slab without any holes.

  8. Transfer the filled baking sheets to the oven to bake the granola mix for 15 to 18 minutes.

  9. Once done baking, allow the granola to cool down completely before breaking up the granola slab into clusters. Store the granola in a clean dry glass container and keep in the fridge for maximum freshness.
