Huevos Ahogados en Salsa Verde
Huevos Ahogados en Salsa Verde is very similar to a Shakshuka but made with a Mexican flare. It is filled with bold and fresh flavours, a lush amount of healthy greens that are sure to energize you as you start your day right or right after a workout.
Ingredients:
255g fresh tomatillos
105g onions
12g, 3 garlic cloves
10g, 1 serrano pepper
705ml water
1 tsp coarse Himalayan salt
50g fresh cilantro, leaves and stems
2 - 5 eggs
Directions:
Take off the husk from the tomatillos, rinse the tomatillos and set them aside. Peel the onions and garlic then place them in a clean large pot together with the tomatlios, serrano pepper and water.
Bring the contents to a boil for 12 to 15 minutes until the tomatilios are softened and slightly brown.
Fish out all the contents from the boiled liquid using a slotted spoon and put them in a blender. Save about 300 mls water for later.
To the contents in the blender, add in the salt and cilantro then blitz on high speed until everything is well combined to make salsa verde. Save the salsa verde in a container to use as a condiment or pour it in a large cast iron skillet.
Turn the heat to medium heat to warm up the salsa verde, crack in it 2 to 5 eggs (depending on the quantity of the salsa verde) while leaving some room between each one.
Then place a lid on the skillet for the eggs to cook on low heat until they are set. This will take 5 to 10 minutes.
Serve the dish in a bowl with a couple slices of bread.
