Vegan Gorditas

Gorditas are a popular Mexican street food featuring gumbo cooked corn dough stuffed with a variety of fillings from refried beans to salsa. These ones are totally plant-based and very much fun to assemble, filled with fresh flavours and enticing to eat.

Ingredients:

330g masa harina

540ml water

½ tsp fine Himalayan salt

60 ml olive oil.

Directions :

  1. Pour the olive oil in a rammequin then store in the freeze for a few hours or overnight to turn solid.

  2. Whisk together the masa flour and salt. Add in the water and mix well using a wooden spoon to form a dough.

  3. Add slightly thawed olive oil and knead into the dough until it feels fluffy.

  4. Form 6 - 8 pieces of dough, each weighing about 130 to 135g.

  5. Warm up large cast iron skillet and flatten each piece of masa dough measuring 3.5 inches with about ½ inch thickness.

  6. Place 3 pieces of the flattened dough in the skillet then reduce heat to medium level.

  7. Cook the masa dough for about 17 - 22 minutes on each side while flipping them every 6 - 7 minutes until they them have a crisp exterior and the interior with be soft and fluffy.

  8. Save the cooked masa dough on a baking rack so it does not sweat and repeat the cooking process for the remaining pieces of flattened corn dough.

  9. Slice the cooked corn dough half way along the edge and fill with your your favorite filling such as bean salad, refried beans, shredded meat, baked plantains, and salsa verde to balance the flavors.

  10. Enjoy as a snack or pair with with a salad or soup to turn it to a full meal.
